Innovative Approaches to Plant Protein Extraction

The increase in global population, the change in lifestyle patterns, environmental sustainability challenges, and increasing emphasis on health-conscious nutrition have brought alternative protein sources to the forefront. In addition to providing nutritional functionality, plant proteins are frequently preferred due to their essential amino acid content, low cost and health-improving properties. Microwave-assisted extraction (MAE), ultrasound-assisted extraction (UAE), and high hydrostatic pressure (HHP) techniques represent innovative, non-thermal processing methods which are increasingly explored as alternatives to conventional extraction approaches in plant protein production. These advanced technologies enhance protein recovery by disrupting plant cell matrices and facilitating the release of intracellular components, thereby improving both extraction efficiency and the functional properties of the isolated proteins. This study aims to assess the efficacy of emerging extraction technologies by reviewing recent advancements in innovative methods for plant protein isolation. The study revealed that, compared with traditional alkaline extraction methods, protein yields increased by 12–85%, while processing times were reduced by up to 30-fold. In particular, combined microwave- and ultrasound-assisted systems enhanced the nutritional and functional properties of proteins and enabled more efficient utilization of energy input compared with conventional approaches.
