Antagonist Bacteria and Yeasts in Postharvest Biological Control of Fruit and Vegetables: A Comparative Approach

Abstract

Recent studies on antagonist bacteria and yeasts in postharvest disease management have shed insight on similar and contrasts that exist between two groups of microorganisms in terms of biocontrol efficiency, processes, and application issues that they present.  According to available research, bacteria exhibit a wide range of activities and a diverse range of biochemicals, but yeasts are more robust to conditions of storage and to stresses such as dryness and salinity.  In this regard, evaluations highlight benefits of bacteria, particularly their quick pathogen suppression and various biochemical attack mechanisms. Yeasts, on other hand, stand out due to their stability, low toxicity, and advantages they offer in terms of food safety.
