Determination of in Vitro Antioxidant Enzyme Capacity and Oxidative Stress Levels in Commonly Consumed Plants Helianthus tuberosus, Zingiber officinale and Raphanus sativus var. niger

Abstract

Many therapeutic drugs used today owe their source to medicinal plants. Each plant has its own unique activity and biochemical profile. In this study, three different plants, Helianthus tuberosus, Zingiber officinale and Raphanus sativus var. niger, which are well known in daily life, were used. In this study, which was conducted for the first time, three different plants with limited antioxidant activity were selected and their antioxidant capacities were compared. Extracts were prepared by homogenizing the stem parts of H. tuberosus, Z. officinale and R. sativus var. niger plants with 1.15% potassium chlorine. Then, antioxidant enzyme activities of catalase (CAT) and superoxide dismutase (SOD) and levels of malondialdehyde (MDA), an oxidative stress marker, were determined by spectrophotometric methods. As a result of the research, the highest SOD enzyme activity was observed in the R. sativus var. niger plant, while the highest CAT enzyme activity was observed in the Z. officinale. On the other hand, while the MDA level was the highest in the H. tuberosus plant extract, the lowest MDA level was observed in the Z. officinale.
